Speculoos cheesecake..e la "mia" salsa mou!

Ci sono alcune ricette che quando le prepari ti rendi già conto che saranno dei masterpiece. Certo, mettere insieme "cheesecake" e "speculoos" odora già di capolavoro. In più ci metti l'anima per preparare una sottospecie di mou che ti impazzisce due volte prima di trovare le quantità e le temperature giuste...e infatti la soddisfazione arriva quando sia gli amici che la family (pure il fratello, sempre un po' scettico se si parla di roba speziata come gli speculoos) si scofanano l'intero capolavoro in un batter d'occhio...vabè, pochi discorsi, che cheesecake sia!

INGREDIENTI (per una teglia apribile di 23 cm di diametro)

  • 250 g di biscotti speculoos
  • 70 g burro fuso
  • 100 ml di panna fresca
  • 500 g di formaggio cremoso (meglio del Philadelphia non c'è niente!)
  • 125 g zucchero a velo
  • i semini di una bacca di vaniglia
  • 12 g gelatina in fogli
Per il mou:
  • 200 g zucchero
  • 100 ml panna fresca
  • 1/2 bicchiere scarso di acqua



Prima di tutto preparate il mou: in un pentolino con il fondo bello spesso, mettete lo zucchero e l'acqua. Fate scaldare a fuoco medio-basso senza mescolare, al massimo roteate il pentolino se vi sembra che ci sia dello zucchero sui bordi. Quando inizierà a scurirsi, tenetelo d'occhio perché non bruci, mescolate e lasciate cuocere finché non sarà bello colorato. Nel frattempo, scaldate la panna senza farla bollire, quindi quando il caramello vi sembra pronto toglietelo dal fuoco e aggiungete la panna mescolando bene e velocemente, attenzione perché se la panna non è calda o non mescolate bene viene fuori un pasticcio (lo dico per esperienza.....). Una volta che tutto sarà ben amalgamato lasciate raffreddare completamente. 

Suggerimento: se pensate di usarlo, preparatene di più, si conserva bene nei barattoli della marmellata!

E ora la cheesecake: frullate i biscotti per ottenere una sabbiolina, aggiungete il burro e mescolate. Mettete un foglio ritagliato con la forma giusta sul fondo della teglia, quindi coprite con i biscotti sbriciolati e schiacciate bene con le mani: il fondo dovrà essere bello spesso, gli speculoos devono sentirsi tanto mangiando la cheesecake. Una volta preparata la base, mettetela in frigorifero.
Per la crema, ammollate la gelatina in una ciotola di acqua fredda, quindi quando sarà morbida strizzatela e scioglietela in un cucchiaio di panna scaldata, quindi lasciate raffreddare. Montate il resto della panna, e aggiungetela al Philadelphia che avrete ammorbidito con un cucchiaio e mescolato con lo zucchero a velo e i semini di vaniglia. Unite anche la gelatina sciolta e amalgamate fino a ottenere una crema bella liscia.
Versate sul fondo di biscotti e rimettete in frigorifero per almeno due-tre ore.

Quando sarà bella soda, coprite o decorate (a seconda di quanto dolce la preferite) con la salsa mou, e servite dopo averla lasciata fuori dal frigo almeno una quindicina di minuti.


- ENGLISH VERSION -

SPECULOOS CHEESECAKE WITH CARAMEL SAUCE

INGREDIENTS:
  • 250 g speculoos biscuits
  • 70 g butter, melted
  • 125 g icing sugar
  • 100 ml double cream, whipped
  • 500 g cream cheese
  • 1 tsp vanilla extract
  • 12 g jelly (in layers)
for the caramel sauce:
  • 200 g granulated sugar
  • 1/2 a glass of water
  • 100 ml double cream

First, prepare the sauce: put the granulated sugar and the water in a pan, and let it heat gently without stirring. In the meantime, heat the cream. When the sugar mixture turns darker, stir until it becomes a golden caramel, then remove from the heat and add the heated cream, stirring (be careful, it's the most difficult part of the preparation, if the cream is not hot enough or you don't go on stirring, the mixture will become solid and won't be useful anymore). When you'll have obtained a smooth sauce, slightly lighter-coloured than caramel, let it cool down.

For the cheesecake base, crush the biscuits in fine crumbs and add the melted butter, you should obtain a mixture with the consistence of wet sand. Transfer the mixture in a cake tin covered with baking paper, and press well on the base with your hands or the back of a spoon (you should obtain a thick base, speculoos biscuits have a leading role in the recipe!), then put the tin in the fridge.
In a bowl, soften the cheese mixing it with the icing sugar, then add the vanilla extract. Soften the jelly layers in a bit of cold water, then squeeze it and melt it in a bit of heated cream (or milk). Let it cool down and add it to the cheese mixture, then add the whipped cream and mix well to obtain a very smooth cream.
Pour the cream on the biscuit base, and put in the fridge for at least 2-3 hours. Before serving, add the caramel sauce.
